Vatapa made from shrimp, alfacaca, chicory, garlic, wheat flour with or without rice, Manicoba, made of maniva leaf, charqui, fat, calf's foot jelly, ear, foot and salted pork ribs, sausages etc., and Caruru form a major part of the northern Brazilian diet.

The northeast region of Brazil has a food which contains vatapa, moqueca, and acaraje, which is a salted muffin made of white beans and onion fried in palm oil, stuffed with dried shrimp, red pepper and caruru.

The remaining part of the country is the sea coast, where seafood, shellfish and coconuts are abundantly included in the Mouth watering Brazilian Diet food.
